The Dragon Boat Festival originates from the worship of natural celestial phenomena. It was created by ancient ancestors as a festival to worship the dragon ancestor and pray for good fortune and ward off evil. In the pre-Qin period, the fifth hexagram of the Qian Gua in the Yi Jing, the first of the classics that combines Chinese natural philosophy and humanistic practice, says: "Flying dragon in the sky, advantageous to see the great man." This means that on this day, the midsummer Dragon Boat Festival, the seven mansions of the Azure Dragon ascend to the south, reaching the most "central" position of the year, making it an especially auspicious day. After historical evolution, the celebration has become richer, commemorating famous historical figures such as Qu Yuan and Wu Zixu. However, dragon boat racing and eating zongzi remain the two major customs of the Dragon Boat Festival. 1. Northwest Zongzi

 

Among the various flavors of Northwest zongzi, the Shaanxi sweet zongzi, "honey zongzi," is particularly popular and is a summer specialty in the Shaanxi region. The honey cold zongzi is shaped like a water chestnut. After being steamed in a pot, the zongzi is white and jade-like, cool and refreshing. When eating, cut it into small pieces with silk thread or a bamboo knife, place it on a plate, and drizzle with honey or rose/osmanthus syrup. It is chewy, soft, sweet, fragrant, refreshing, and has a unique flavor.

 

 

 

 

2. Northeast Zongzi

 

Beijing zongzi is a representative variety of northern zongzi. It is relatively small and is in the shape of a slanted quadrangle or triangle. The north is accustomed to eating glutinous millet zongzi, often filled with red dates, red beans, and red bean paste. After being steamed in a pot, the zongzi is sticky, delicate, and fragrant.

 

 

3. Southeast Zongzi

 

Southeast zongzi is mostly wrapped in reed leaves, but some also use reeds. The shape is close to a triangular cone, and the size is larger. The south also eats sweet zongzi, but usually, southerners prefer meat zongzi, with pork, egg yolk, and ham. Among them, Jiaxing fresh meat zongzi is famous and has the reputation of "king of zongzi." After being steamed in a pot, the meat zongzi is glutinous but not mushy, fatty but not greasy, fragrant, and has a balanced salty and sweet taste.

 

 

 

 

 

4. Southern Zongzi

 

Guangdong zongzi is a representative variety of southern zongzi. It is large and unique in shape. In addition to fresh meat zongzi and red bean paste zongzi, there are also egg yolk zongzi made with salted egg yolks, and assorted zongzi with fillings such as chicken, duck, char siu, egg yolk, mushrooms, and mung bean paste. After being steamed in a pot, the zongzi is fragrant, soft, smooth, and sweet.
